For seniors looking for a senior week snack, families looking for a commencement weekend meal or any Easton resident looking for a fresh place to grab a bite, there’s a new spot on College Hill with some traditional Mexican spice.
Mexico Lindo, which opened in April, serves up a variety of the cuisine’s classics. The Cattell Street location is owner Jose Avilas’ second edition of the restaurant: there’s another one in Bethlehem that opened in 2009.
For those who haven’t tested out this culinary addition, I gave it a try for you.
I ordered the nachos con queso to start, which were delicious. The guacamole helped the nachos create a good blend of flavor, while the chips were softer and balanced by different cheeses. A sour cream lover could say there wasn’t enough cream in the nachos, but I thought the variety of melted cheeses was more important.
With a friend, we ordered a lot of entrees: chicken sopes, shrimp and chicken tacos, taquitos fraguas, a quesadilla and a torta mexico lindo (I took a bunch of food to go).
The top order of the day was the torta mexico lindo: a Mexican sandwich that had delicious bites of Mexican sausage, avocado and chipotle mayo. There was a slight kick to the sausage, something that was missing in a lot of the orders we got, since I avoided the heavy spice. I also thought the crunchy texture of the sandwich brought out the flavors to the fullest.
The chicken sopes were soft and had a great aftertaste. It was cooked at a perfect temperature, and the serving size wasn’t too overwhelming, giving it a more comfortable and home-like taste.
The tacos weren’t at the top of my list. I opted for the soft flour tortilla, but I thought some of the crunchier items, such as corn tortillas, could have made the tacos better. There could have been more shrimp in the shrimp taco, and the cheese could have stood out more.
Speaking of crunch, I thought the taquitos fraugas were baked perfectly and had a strong, bold flavor. There could have been more filling, but it was a delicious option.
A final choice for the meal was a tres leches cake, which had a sweet and spongy flavor, adding a nice end to our huge order.
Mexico Lindo is open 11 a.m. to 8 p.m. from Monday through Thursday, and 11 a.m. to 10 p.m. on Friday and Saturday. On Sundays, Lafayette students will have to settle for Cinco.
