Several new shops joined — and left — the Easton ecosystem this summer. Here are some changes to local businesses that you might have missed.
Status: Open, as of July 18
The arrival of Hologram Zoo Lehigh Valley brought a virtual zoo-going experience, by way of holograms, to downtown Easton. Reportedly, the first of its kind in the Northeast, attendees of the zoo will experience thirty-minute shows featuring wildlife holograms, some interactive. For Lafayette College students interested in this experience, the zoo provides a 10% discount for Leopards with a student ID.
Status: Open, as of late July
With food options ranging from omelets and breakfast sandwiches to cheesesteaks and burgers, co-owners Photis Zographou and George Kouros are trying to bring the best of both worlds when it comes to the first two meals of the day. For the coffee lovers out there, the cafe’s notoriously strong java could be your newest source of morning fuel. You can find West Side Grill & Cafe at 1100 Bushkill St.
Status: Open, as of Aug. 15
Do you smell that? It’s your newest vendor of curated perfumes in downtown Easton, The Whiff Shop, opening its doors. Specializing in the acquisition of rare scents from around the world, as well as providing individual consultations on the right fragrance for you, owners Stephanie and Sanket Pathak are embarking on a scent-seeking mission in the name of all Easton residents. Project Paw
Status: Closed, as of June 29
Formerly owned and operated by the Center for Animal Health and Welfare, Project Paw ceased operation at the end of June in an attempt to allocate resources to better serve the community. During its tenure in Easton, Project Paw provided residents with a cat cafe, thrift store and community programming in the form of a pet food bank. Despite the closing of this location, the minds behind the project are still providing resources to the community through their pet food pantry as well as other low-cost services to pet owners in the area.
Two Rivers Brewing
Status: Closed, as of Aug. 17
After a 13-year-long stretch in the streets of Easton, Two Rivers Brewing is shutting its doors, citing rising costs as the driving force behind the decision. Residing in what is considered one of the most architecturally stunning buildings in Easton, locals will remember it for its live music, trivia nights and more importantly, its house-made craft beer. Owner Troy Reynard plans to semi-retire at this juncture, and remains thankful for all the connections formed over the years.
