Billy’s Diner looks to shake up the Easton food scene
Students looking for a new place to eat off-campus may not need to look further.
Billy’s Diner, established in 2000 and located in Bethlehem, is opening a new location in Easton. Claiming that it is “not your ordinary diner,” Billy Kounoupis prides himself on maintaining an establishment with a big city feel but small town attention.
The walls of the diner are decorated with hand-detailed sponge paint patterns, as cool jazz music plays in the background, and Billy personally prepares each and every meal.
The menu at Billy’s Diner contains several interesting items. In an attempt to pay homage to Peeps, the marshmallow candies that originated in Bethlehem, Billy offers a “Peeps”uccino; a white chocolate, espresso with steamed milk, whipped cream and a Peep.
Billy will continue this special drink at the Easton location.
On Billy’s breakfast menu, several classic dishes are served with a twist. You can try coconut stuffed french toast, a green eggs and ham sandwich, and “Snazzy” pancakes.
For lunch, you might want to try a “Mindfreak burger.” This creation of Billy and his cousin, Criss Angel is only served while supplies last every day. This burger is stuffed with fresh ingredients and served with fries, coleslaw, soup or salad.
Michael Bloom ‘16 has eaten at the Bethlehem location with several soccer teammates.
“Definitely excited for Billy to open an Easton location,” he said. “The place has a great vibe.”
Billy Kounoupis is a renowned businessman who has written several books, and has made several TV appearances. The Easton location is still under construction, but will be opening soon.
