Personally, I love Key Lime Pie. It was one of my favorite desserts as a kid and no one makes better key lime pie than my dad. Luckily, he’s not too secretive and shared his recipe with me. My one warning is to make sure to invest in a bottle of Nellie & Joe’s Key Lime Juice. One bottle usually yields about 3-4 pies, depending on how tart you like your desserts. My bottles barely make it past 3 pies. Getting key lime juice is extremely important because key limes are more acidic, leading to a tarter flavor than regular limes. Follow these simple instructions and I can promise you the most delicious and easiest pie imaginable. Enjoy!

 

Ingredients:

1 can condensed milk

1 store bought graham cracker crust

½ cup key lime juice

1 regular lime, sliced for garnish

Zest of one lime, grated over

3 egg yolks

 

Preparation

Preheat the oven to 350 F and smoothly blend the condensed milk, key lime juice, and eggs.

Pour mixture into the pie crust evenly and bake for 15 minutes.

Remove from oven and chill for at least 2 hours.

Garnish with lime slices and zest. Serve with whipped cream if desired.
